We are doing our own processing on the property this year. We have a new shed designed to take our Oliomio processing machine. Producing our own oil is very exciting.
The olives are fed into a hammer mill to be crushed and the paste dropped into a malaxer, where it is turned. This allows the oil to develop. The oil and paste then goes through a centrifuge, called a decanter and the oil magically separates off from the rest of the paste. Such clever machinery. Each variety of olive produces varying flavours. Each year the flavour of a particular variety will vary from the previous year. (Just like with grapes.)
