Ingredients
- 2 cups flour
- ½ tspn Baking Powder
- ½ tspn Baking Soda
- ½ tspn salt
- 2 large eggs
- ½ cup mild Extra virgin Olive oil
- 1 bare cup sugar
- 2 Tbsp lemon juice
- 2 Tbsp lemon zest
- 1 tspn vanilla essence
- Approx. ½ cup icing sugar to roll balls in
The dough needs to be prepared and then chilled for an hour to make it easier to handle as it is a sticky dough.
Method
Measure the flour, baking powder and baking soda in a bowl and mix to combine
In another bowl put the sugar, olive oil, lemon juice, zest and vanilla – add the eggs and whisk well to start dissolving the sugar. Add the dry ingredients to the liquid mixture a third at a time but be careful not to overmix.
Cover the bowl and chill for approx an hour.
When ready to bake preheat oven to 180C and line a biscuit tray with baking paper.
Put the icing sugar on a small plate. Spoon up walnut size pieces of dough and roll into a ball. Then roll in the icing sugar and lay them on the tray about an inch apart. Bake 10-12 mins
Leave on the tray for 5 mins and then place on rack to cool completely. Try not to eat immediately
